  • 1 1/2 lb hamachi sliced 1/8 thick
  • 1 whole serrano sliced thin (on a mandolin)
  • 1 whole asian pear peeled and cut into small batons
  • 1/4 cup cilantro leaves
  • 1 small black truffle sliced thin

Truffle White Balsamic dressing

  • 5 tbsp white balsamic vinegar
  • 1 tbsp tamari soy sauce
  • 1 tbsp black truffle oil

For the Dish

  • For the dressing place all the ingredients in a small bowl and mix well, set aside.  Take the hamachi that should be sliced a touch thinner than sashimi.  Place the hamachi on your plate.  Then place one slice of serrano and asian pear on each piece of hamachi.  Then spoon your dressing all over the hamachi.  Season very lightly with a pinch of salt.  Then garnish with black truffle slices, cilantro, and edible flowers if desired.  Serve and enjoy!  Simple and refreshing.
