Roasted Cabbage with Fig, Garlic, and Za'atar

You have to try this amazing roasted cabbage recipe with za'atar and figs!  This recipe has a mediterranean feel to it and you will absolutely love it!

This roasted cabbage recipe is easy and absolutely amazing! When you have humble ingredients like cabbage, you need to be precise with seasoning to enhance it as much as possible. In this recipe I went for za'atar seasoning (typically a mediterranean spice made up of of thyme, sumac, sesame seeds) to elevate this cabbage. The key

I thought why not add the figs, and make a quick sauce out of roasted garlic, yogurt, and veganaise. Only a few ingredients but they really shined all together. I hope you enjoy it!

Roasted Cabbage with Za'atar, Fig, and Garlic

For the Green Cabbage

  • 1 large Green Cabbage ((cut into 1/8))
  • 10 tbsp olive oil
  • 1/4 cup za'atar
  • 2 tsp salt

Roasted Garlic Yogurt

  • 1/4 cup roasted garlic cloves
  • 3/4 cup vegenaise
  • 3/4 cup yogurt
  • 1 tsp salt

Figs

  • 8 whole figs (cut in half)
  • 1 tbsp butter
  • 1 pinch sugar
  • 2 tbsp white balsamic
  • 1 pinch salt

Garnish

  • 3 tbsp chives (chopped)

How to Roast Cabbage

  1. Take the cabbage and cut it into 8 equal pieces (think wedge). Place the cabbage on a sheet pan lined with parchment paper. Pour 1 1/4 tbsp of olive oil over each piece of cabbage (front and back of each piece). Season with salt and za'atar all over. Place in a preheated 375 degree oven and bake for 40-45 minutes. For the Roasted Garlic Sauce

  1. Place everything into a blender and puree until smooth. Season with salt and set aside.

To Finish

  1. In a hot saute pan add butter, pinch of sugar, and figs face down in the pan. Cook for 3 minutes and then add the white balsamic. Cook for another 3 minutes and then turn off the heat. Place garlic sauce on the plate, add roasted cabbage on top. Finish with figs and chives. Serve and enjoy!
