  • 1 lb black beans ((soaked if you have time, for at least an hour or overnight))
  • 1/2 whole onion
  • 6 cloves garlic
  • 4 dried new Mexico (chili)
  • 2 dried ancho (chili)
  • 1/2 dried chipotle
  • 1 1/2` tbsp cumin
  • 10 cups water
  • 1/3 cup cilantro
  • 1 tbsp salt

Garnish

  • 1/4 cup sour cream
  • 3 tbsp cilantro leaves

How to make black bean soup

  1. Drain the black beans if you had time to soak them.

    Then place onion, garlic, beans, chili's, spices, and 10 cups of water in a pot.  Bring to a boil and turn down to a simmer and cook for 30 minutes. Then add 2 tsp of salt and cook for roughly another 30 minutes or until completely tender.  Place beans in a blender with some of the liquid and puree with cilantro in batches. Adjust seasoning with the last tsp of salt if need be.  You can strain out some of the beans and not puree them all to keep it for the soup if you want a little texture and not haver the soup completely smooth.

    Place the soup in bowls and garnish with sour cream and cilantro. Serve and enjoy!
