Sea Bass with Lentil, Curry, and Cauliflower

This was one of the first recipes I made as we started into this stay at home during this covid 19 pandemic. For the most part we were getting our groceries from local farms and whole foods delivery. They had sea bass and we decided to go for it on this particular evening. In order to cook a great meal during these tough times you have to have a good stocked pantry and a few fresh ingredients. This is a great light dinner to cope with all those extra pounds we are putting on with all the baking we are doing. Here is the recipe on how to make sea bass with cilantro and lentil, I hope you enjoy it!

Recipe ingredients


1 lb of sea bass cut into 4 oz pieces

Salt

5 tbsp of cilantro pistou

 

Jalapeno Cilantro Pistou

1 bunch of cilantro

1 jalapeno

1/4 cup of pumpkin seeds toasted

1 1/4 cup of olive oil

1 tsp of salt

 

Lentil puree

1/2 cup of red lentils

1 large orange bell pepper

1 tsp of fresh minced ginger

1 tsp of turmeric

1 1/2 tbsp hot curry

4 cups of water

1 1/2 tsp of salt

2 tbsp of ghee or olive oil

 

1/2 cauliflower head

3 tbsp of olive oil

salt


Recipe Instructions

How to make cilantro pistou,

Place all the ingredients except for the olive oil into a food processor or vitamix. Turn on and puree everything together, and while the processor is still on and running. Drizzle the oil in a steady stream until you have a smooth green sauce. Season with salt and set aside

How to make curry lentil puree,

In a small sauce pot add oil, ginger, bell pepper, and a pinch of salt. Cook for 2 minutes and then add curry. Cook for 1 minute and then add the lentils, water, and another tsp of salt. Bring to a boil and then turn down to a simmer. Cook until the lentils are cooked all the way through. Drain off any excess water and reserve for the puree if needed. Place the lentils into a vitamix and add a touch of the liquid and puree until smooth. Season with salt if needed. Set aside and keep warm.

How to roast Cauliflower,

Preheat oven to 350 degrees. Then take your cauliflower and make big slices about every 1/2 inch. You should have roughly about 5 slices for a whole head of cauliflower. Then drizzle aggressively with olive oil, salt, and pepper. Place in the oven for 15-17 minutes.

To finish,

In a large saute pan on medium heat add oil.  Take sea bass and season with salt.  Place the sea bass fillet side down (the side seasoned with the salt). Season the bottom side of the fillet with salt now too.  Cook for 6-7 minutes on the one side. The fish should be cooked almost all the way through on the one side.  Then flip over the bass, add a spoonful of cilantro pistou and cook for 1 more minute.  Turn off the heat. Add a spoonful of lentil puree onto the plate. Add a few pieces of cauliflower next to it. Place the sea bass next to the puree with another drizzle of pistou. Finish with dill and celery leaves if desired. Serve and enjoy!
