Here is a fantastic huckleberry cobbler recipe. The down home recipe takes a small twist with huckleberries.
Huckleberries are a wonderful wild berry that usually is found in the northwestern part of the america. They look a lot like blueberries but to me they don’t quite have the same sweetness as a blueberry, they tend to be a little more on the tart side. I added some peaches and sugar to the mixture to balance it all out!

Huckleberry cobbler
3 large white peaches peeled and large diced
3 nectarines large diced
2 cups of huckleberries
1 cup of sugar
1/3 cup flour
2 tsp of cinnamon
3 tbsp amaretto
Pinch of salt
Topping
2/3 cup sugar
1/2 cup four
1/2 cup oats
1 stick of butter
1 tsp of cinnamon
Huckleberry Sorbet
2 pint Huckleberries
2 1/3 cup water
2 cup sugar
1 lemon (juiced)
For the Sorbet
Place water, berries, and sugar in a pot. Bring to a boil and cook for 5 minutes. Then cool slightly and place in a blender and puree until smooth, add the lemon juice, strain into a bowl then chill until completely cold. Place in your ice cream maker according to their instructions. Place in an airtight container and place in the freezer
For the Filling
Slice peaches, nectarines place in a bowl with huckleberries. Add the sugar. Add cinnamon, amaretto, flour, and mix well with a wooden spoon. Fill tart shell dish with mixture.
For the Topping
In a bowl add flours, sugar, salt and mix well. Then with a fork add the butter and incorporate until you get a consistency of clumpy or wet sand. Place streusel onto of the cobbler. Place in the oven and Bake for 45 minutes at 400. Take out cool slightly and add a scoop of ice cream
