Here is a simple sweet chili sauce recipe that takes about 10-15 minutes to make. I love this sauce to dip my spring rolls in. It is also try this sauce with this oxtail wonton recipe. You can alter this sauce with multiple different garnishes like peanut, sesame seeds, green onions, cashews, etc...
I like to make my sauce in a small sauce pot that is easy to cook in as well as clean. You can also try it fish as well. Endless ways to use the versatile sauce and it keeps well in the refrigerator as well because of the high vinegar and sugar content. Thai Sweet Chili Sauce
- 1 cup rice wine vinegar
- 2/3 cup sugar
- 1-2 each thai chili (chopped (or 1 tbsp sambal chili paste))

In a small pot, add rice wine vinegar, sugar, and thai chili if you have them. Bring to a boil and turn down to a simmer. Cook for 7-9 minutes and then turn off the heat and allow to cool slightly. If you don't have thai chili then here is where you can add your sambal and cool.
Once cooled you can add garnishes is like chopped peanut or cashew, sesame seeds, green onions, citrus zest is also very good, lime, lemon, orange. This recipe is the basic version
