Here is a great use for peaches this summer, sorbet! Who doesn't like ice cream and sorbets in the summer especially with the hot weather. I love peaches and my favorite peaches are probably the white and doughnut peaches. I didn't use either one of those for this recipe but you can easily substitute them for this recipe if they are available. Sorbets are very easy and are a great alternative if you don't want any dairy in your ice cream. Sorbets and ice creams are a great fall back for desserts if you don't have the time to make anything else.
Recipe
3 cups water
2 cups sugar
3 cups of peeled chopped peaches
2 tsp of cinnamon
1 lemon juiced
Place peaches, sugar, and water in a pot and bring to a boil. Turn down to a simmer and cook for 5 minutes. Turn off the heat and cool completely.
Place everything in vita mix blender and puree until smooth. Add cinnamon, and lemon juice to the mixture.Then pour into an ice cream machine. Use ice cream machine according to their directions. Once done, place into an air tight container and freeze. Let the sorbet properly chill and then serve.
