How to Cook Black Bass with Pumpkin Seed Milk

This recipe is really nothing more than trying to use pumpkin seeds in a few different ways to keep things interesting.  John Paul and Eloise really loved this dish, Eloise said it kind of reminded her of vegetable cereal, which I'm taking as a compliment.  Black bash is a great, clean tasting fish that crispens up really nices when cooked on the skin side. Here is the recipe I hope you enjoy it!

Recipe Ingredients

Black bass with pumpkin seed
4 4 oz pieces of black bass

Pumpkin seed "milk"
1 cup roasted pumpkin seeds
2 1/4 cups water
Salt to taste

3 cups of large diced cabbage
1 cup fresh peas
1 cup of cauliflower cut small pieces
1/2 sliced thin onion
1 tbsp curry
1 tbsp of mint or cilantro (optional)
1 tbsp of pumpkin seed oil 2 tbsp of butter
Salt to taste

1/4 cup of roasted pumpkin seeds
2 tbsp of pumpkin seed oil
1/4 cup of pea sprouts
 

Recipe Instructions

How to make pumpkin seed milk,

Place all the ingredients into a vitamix and puree until smooth. Strain through fine mesh strainer and season with salt. Set aside.

How to saute Vegetables

In a large saute pan add butter and pumpkin seed oil along with cabbage, onion, and cauliflower. Cook for 3 minutes and then add a pinch of salt and curry powder. Cook for another 3 minutes and add the peas. Cook for another 2 to three minutes until all the vegetables are tender. Finish with salt and fresh mint.

How to cook black bass ,

In a large saute pan add oil on medium high heat.  Season both sides of the black bass with salt and place in the saute pan skin side down.  With a spatula press the fish down until it sits flat in the pan.  (when you add the fish to the pan it will curl up, you need to press down firmly until the skins "sets" and then the fish will lay flat and sear evenly on the skin side so that it will brown properly).  Cook the fish for about 4-5 minutes only on the skin side.  The flesh side should cook 85% of the way.  Then flip over for 30 seconds and take out of the pan. Place a few spoonfuls of the vegetable down in the bowl. Pour a little of the pumpkin seed milk around. Place the fish on top of the vegetables. Add some roasted pumpkin seeds, pumpkin oil, and sprouts. Serve and enjoy!
