How to make the best blueberry muffins

Nothing says brunch like fresh blueberry muffins. As a kid growing up, I don’t know if there was anything much better than smelling those fresh blueberry muffins being pulled hot out of the oven. For me, a perfect blueberry muffin is one that has streusel on top. I think that extra layer of crunchy butter and sugar combination is a must to having the sweetness just right. Here is the recipe I hope you enjoy those muffins and adding to your muffin top!

Recipe Ingredients

Blueberry Muffins

1/2 stick of butter 

2 oz of vegetable oil

1 scant cup of sugar

2 eggs

1 tbsp of vanilla paste

1/2 tsp baking soda

1 1/2 tsp of baking powder

1/2 cup of buttermilk or yogurt

2 cups of flour

1/2 tsp of salt

2 cups of blueberries


Streusel Topping

1 stick of butter

scant 1/2 cup of sugar

3/4 cup of flour

Recipe Instructions

How to make blueberry muffins,

Preheat oven to 350 degrees. In a mixing bowl with a paddle attachment add butter and sugar. Turn on medium speed and cream together the butter and sugar. Then add the egg, and vanilla bean paste. In a separate bowl mix together the flour, leavening agents, and salt. Mix well and then alternate the buttermilk and flour mixture into the batter. Mix well until it is well incorporated. Finally mix in the blueberries.

Line a standard 12 cup muffin tin with cupcake liners. Then take an ice cream scoop or spoon and fill with batter three quarters of the way full.

How to make Streusel topping,

Place flour and sugar in a bowl. Then take a cold stick of butter and cut in half lengthwise and then again. Then slice tiny little cubes of butter and add it to the bowl of sugar and flour. Using a fork mash the butter into the flour mixture, until the butter has been completely incorporated. Then take your streusel topping and spoon over each one of the blueberry muffins.

Then place the muffin tray into the oven and bake for 30-35 minutes or until golden brown and cooked through. Take out, serve and enjoy!
