Banana Muffins

A quick an easy alternative to banana bread, we have banana muffins! This almost the identical recipe as banana bread but a little smaller batch size an it roughly makes about 1 1/2 dozen muffins. Super easy recipe that takes care of all those frozen bananas adding up in your freezer. Simple way to use those bananas up and enjoy a little baked treat during the week. Here is the recipe for banana muffins, I hope you enjoy it!

Recipe Ingredients

1 1/4 cup flour

1 scant cup sugar

1/3 cup water

1 egg

1/4 cup oil

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

pinch of nutmeg

1 tsp vanilla

1/2 tsp salt

3 frozen bananas thawed

Recipe instructions

How to make banana bread,

Preheat oven to 350 degrees F. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, vanilla, eggs, banana water, bananas . Mix wet ingredients into dry, add nuts if desired and fold in until it is well incorporated . Pour into muffin pan that have been sprayed with non stick spray or with parchment paper muffin cups. Place in the oven and  bake for 17-19 minutes until cake tester comes out clean. Make sure you rotate the pans halfway during the baking process. Take out and let it cool for at least 10 minutes. Serve and enjoy!
