- 2 lb chicken tenders
Marinade
- 1/2 can coconut milk
- 1/4 cup soy sauce
- 1/4 cup oil
- 1 tbsp curry powder
- 1 tsp turmeric
- 2 tbsp yellow thai paste
- 1 tsp ginger minced
- 1 tsp garlic minced
- 1 tbsp cilantro chopped
- 2 whole limes
- 1 pinch salt
Cucumber Pickle
- 1/2 cup red onion sliced
- 1 whole cucumber quartered sliced
- 1/2 cup rice vinegar
- 1 tsp salt
Peanut Sauce
- 1/2 cup peanut butter
- 1/2 cup warm water
- 1 tbsp sriracha
- 2 tbsp rice wine vinegar
- 1 splash soy sauce
- 1 tbsp cilantro chopped

For the Marinade
- Place everything in the blender and puree until smooth. Pour over the chicken and allow to marinate for an at least hour. Skewer with bamboo skewers if desired.
Cucumber Pickle
- Place all the ingredients in a bowl and mix well. Season and allow to marinate for at least 30 minutes.
For the Chicken
- Simply season the chicken lightly with salt and grill for 3-4 minutes on each side. Take off the grill place on a plate (with or without the skewer). Add the peanut sauce and a cup of cucumber pickle. Serve and enjoy!
