For the Green Cabbage

  • 1 large Green Cabbage (cut into 1/8)
  • 10 tbsp olive oil
  • 1/4 cup za'atar
  • 2 tsp salt

Roasted Garlic Yogurt

  • 1/4 cup roasted garlic cloves
  • 3/4 cup vegenaise
  • 3/4 cup yogurt
  • 1 tsp salt


  • 8 whole figs cut in half
  • 1 tbsp butter
  • 1 pinch sugar
  • 2 tbsp white balsamic
  • 1 pinch salt


  • 3 tbsp chives chopped

How to Roast Cabbage

  • Take the cabbage and cut it into 8 equal pieces (think wedge). Place the cabbage on a sheet pan lined with parchment paper. Pour 1 1/4 tbsp of olive oil over each piece of cabbage (front and back of each piece). Season with salt and za'atar all over. Place in a preheated 375 degree oven and bake for 40-45 minutes. Flipping the cabbage half way through the cooking process

For the Roasted Garlic Sauce

  • Place everything into a blender and puree until smooth. Season with salt and set aside.

To Finish

  • In a hot saute pan add butter, pinch of sugar, and figs face down in the pan. Cook for 3 minutes and then add the white balsamic. Cook for another 3 minutes and then turn off the heat. Place garlic sauce on the plate, add roasted cabbage on top. Finish with figs and chives. Serve and enjoy!
