For the Green Cabbage
- 1 large Green Cabbage (cut into 1/8)
- 10 tbsp olive oil
- 1/4 cup za'atar
- 2 tsp salt
Roasted Garlic Yogurt
- 1/4 cup roasted garlic cloves
- 3/4 cup vegenaise
- 3/4 cup yogurt
- 1 tsp salt
Figs
- 8 whole figs cut in half
- 1 tbsp butter
- 1 pinch sugar
- 2 tbsp white balsamic
- 1 pinch salt
Garnish
- 3 tbsp chives chopped

How to Roast Cabbage
- Take the cabbage and cut it into 8 equal pieces (think wedge). Place the cabbage on a sheet pan lined with parchment paper. Pour 1 1/4 tbsp of olive oil over each piece of cabbage (front and back of each piece). Season with salt and za'atar all over. Place in a preheated 375 degree oven and bake for 40-45 minutes. Flipping the cabbage half way through the cooking process
For the Roasted Garlic Sauce
- Place everything into a blender and puree until smooth. Season with salt and set aside.
To Finish
- In a hot saute pan add butter, pinch of sugar, and figs face down in the pan. Cook for 3 minutes and then add the white balsamic. Cook for another 3 minutes and then turn off the heat. Place garlic sauce on the plate, add roasted cabbage on top. Finish with figs and chives. Serve and enjoy!
