- 3/4 cup oat milk
- 1/2 cup oil
- 2 eggs
- 1 cup brown sugar
- 1 tbsp vanilla extract
- 1 1/2 cup left over oatmeal (cooked with 3tbsp. raisin and 1/2 apple small diced)
- 2 1/4 cup flour
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 1/2 tbsp baking powder
- 1/2 cup raisins
- 3 tbsp raw oats

For the Muffins
- Preheat oven to 350 degrees.Place milk, eggs, oil, sugar, and vanilla into a stand mixer with the paddle attachment. Mix on low speed for about a minute or until everything is well combined. Then add the leftover oatmeal and mix for 20 seconds. Next add the dry ingredients, flour, salt, cinnamon, baking powder, and raisins. Mix for 20-30 seconds until the batter comes together. Take a muffin pan and spray with non stick spray or use muffin parchment cups. Fill each muffin mold 3/4 of the way full. Continue until you have the muffin pan filled, top each muffin with a sprinkle of raw oats. Then place into the preheated oven and bake for 20 minutes. Take out and allow to cool for at least 5 minutes. Serve and enjoy!
