  • 1 whole jalapeno sliced (you can add 1 serrano too if you like spicy)
  • 1/3 cup cilantro leaves
  • 2 small limes juiced
  • 1 salt to taste

How to make edamame guacamole

  • Blanch edamame beans in salted pot of boiling water for 2-3 minutes, until they are tender and soft all the way through. The immediatly place in an ice bath.
    Put jalapeno pepper and cilantro in food processor , puree first and chop fine for 15 seconds.  Then add blanched edamame beans and chop fine for 10 seconds.  Finish by adding avocados, lime, and salt.  Pulse several times to incoporate but don't puree into baby food. I like a little bit of texturw wih the edamame and the avocado. Adjust seasoning with salt. Serve and enjoy with your favorite chip, vegetable, or crackers.
